Easy Lentil Dal Recipe

Lentil dal, being naturally gluten free is a great option for coeliacs. It's also an excellent choice to make a huge amount of and freeze, for quick meals whenever you're pushed for time or just can't be bothered cooking again.

This lentil dal recipe is one of the easier ones we use, and is quick to make using only red lentils.

Easy Lentil Dal

This makes a big load of dal for the freezer - equivalent to about 12-15 servings.

100g butter or 6 tablespoons of oil
2 large onions, finely chopped
100g fresh ginger, grated
2 garlic cloves, finely chopped
2 tsp ground coriander
2 tsp ground cumin
1 tsp ground turmeric
3 cardammom pods
4 cloves
1 tsp fresh ground black pepper
1/4 tsp ground nutmeg
2.2 litres water
600g red lentils, rinsed well
2 grated apples
Salt to taste
Lemon juice to taste

Cook the onion, ginger, cardamom pods and cloves gently in the butter for 5 minutes without colouring. Add garlic and ground spices. Cook for 1 minute while stirring. Add water, lentils and grated apple and simmer for 20-30 minutes. You can leave the lid off the lentil dal towards the end if you find you need to lose some liquid. Add the lemon juice just before serving.

You can also use gluten free stock in the lentil dal instead of some of the water if you like, just for a little added flavour and depth. Perfect served with brown basmati rice.
