No-cook gluten free dairy free sweet recipe

Get this. This gluten free sweetie / candy, whatever you want to call it, is not only gluten and dairy free, it hasn't got any added sugar or fat either. Oh, and did I mention it's really quick and easy to make, and completely no-cook?

I know, what's the point of a treat with nothing bad in it? Well these are really, really tasty, as well as being super-healthy. And gluten free. That enough of a point for ya?

OK, onto the recipe...

Gluten free, dairy free cashew coconut truffle recipe

150g cashew nuts
15g coconut block
75g dried pineapple
Desiccated coconut (around 100g)
100ml water

Put your cashew nuts, coconut block, pineapple and water into a blender and blitz until a smooth paste consistency. You may have to leave it for 5 minutes and give it another bash once the pineapple has softened to get it really smooth.

Then add the desiccated coconut a little at a time, stirring in (don't blend this) until you get a firm mixture that can be formed into balls.

Put some desiccated coconut into a small bowl, roll some mixture into a ball about 2cm across and roll the ball in the coconut. Place on a plate and when you've made all your balls, pop them in the fridge where they will firm up.

And there you go. Tasty, healthy, gluten free dairy free sweeties whenever you want them. I mean, these things should keep for ages in the fridge right? :)
