Translation of Long Japanese Celiac Travel Card

This is the English translation of our longer Japanese Gluten Free Restaurant Card.

I suffer from coeliac disease and I can't eat food that contains gluten at all.

Gluten is a protein found in wheat, rye, barley and oats and if I consume food that contains gluten, it causes damage to my intestine and I become very ill with sharp stomach pains.

The typical foods that contain gluten are breads, cereals, udon, chinese and somen noodles, cous cous, pizza, wonton wrappers, chinese dumplings, spring rolls, batter, fried potatoes, seafood sticks, hamburger patties, sausages, seasoning and paste (e.g. curry paste, white stew paste, white sauce, worcestershire sauce, tomato sauce, salad dressings, soy sauce), cakes and biscuits. Beer also contains gluten and so does most soy sauce.

Could you please check that my dish does not contain gluten at all? If unsure, please let me know. Please also advise which meal is safe for me to eat.

Additionally, please make sure that all the cooking utensils are cleaned thoroughly before preparing gluten free meals. Even a tiniest amount of gluten from bread crumbs or batter can trigger a reaction.

The foods that I can eat include rice, fresh vegetables and fruits including potato and corn, fresh meat and fish, eggs, cheese, milk and nuts. Of course, I can eat food that I listed above if they DO NOT contain gluten. I understand that in Japan, soy sauce is essential to Japanese meals. It seems that gluten free soy sauce is available in Japan too, so I would appreciate it if you could use such product for preparing my meals.
