"I am coming to your hotel from DATE HERE on a half board basis. In my party will be X coeliacs.

I read on the internet that you are able to cater for special diets, and because we are coeliac, it is extremely important that our food is completely gluten free.

This includes avoiding cross-contamination, which can be difficult, so I am hoping you can pass this letter to your chef so they can let me know what sort of food is going to be OK. If something is in doubt, please ask me.

Cross-contamination usually occurs in:

  • frying potato chips in oil that has been used to fry breadcrumbed or battered food (or any other food containing gluten)
  • food being cooked on a grill that has been used to heat bread
  • food being cut on a chopping board that has been used to cut bread
  • gluten free bread toasted in a toaster used to toast normal bread

Common 'hidden' sources of gluten are soy sauce, stock cubes, gravies. and products that don't have any label.

Of course, we can all happily eat vegetables, meat, fish, fruit, eggs, milk, cheese, natural yoghurt and jamon serrano and all sorts of other lovely fresh produce, which I have enjoyed in Mallorca before.

"Del DATE HERE estaré alojado en su hotel a media pensión. En mi grupo habrá X personas celíacas.

En la página web de su hotel leí que Vds. ofrecen dietas especiales. Al ser celíacos, es extremadamente importante que nuestra comida esté completamente exenta de gluten.

Nuestra dieta exige, además, evitar la contaminación cruzada cosa no fácil de evitar si no se siguen unas pautas muy concretas. Por tanto, espero que puedan pasar esta carta a su chef para que me hagan saber qué platos pueden ofrecerme con garantía. En caso de duda en un producto, pregunten al celíaco antes de dárselo.

La contaminación cruzada normalmente se produce:

  • Al freír patatas en el mismo aceite que se ha usado para freír alimentos que contienen gluten (por ejemplo: rebozados tipo croquetas, calamares a la romana, etc.)
  • Carne o pescado a la plancha en la misma parrilla donde se tuesta pan.
  • Al cortar alimentos usando la misma tabla en la que se corta pan.
  • Al calentar/tostar pan sin gluten en la misma tostadora donde se calienta/tuesta el pan con gluten.

El gluten también puede estar presente en muchos productos envasados al usar el gluten como espesante, soporte de aromas... por ejemplo: en salsas al ser espesadas con harina, salsas de soja, pastillas de caldo, embutidos... y productos comprados a granel.

Los celíacos pueden comer con tranquilidad todo tipo de vegetales, carne, pescado, fruta y todo tipo de productos frescos de los que ya he tenido la suerte de disfrutar en mi anterior estancia en Mallorca.
